The Sustainable Table Inc. is the parent organization for both Adam’s Sustainable Table & Cafe Maroc. Both restaurants are the expression of Executive Chef Adam Bernstein’s 30+ years of culinary and restaurant expertise. Our restaurants embody a commitment to provide the most wholesome, unadulterated local organics produce and all natural proteins available in our region. Honest food stuffs procured from farms, ranches, mills located primarily from within a 75 miles radius, most within a 25 mile radius.

We  are committed to protect our earthly resources for future generations. With a vigilant eye on sustainable practices, each and every decision becomes a search for a better solution.

Adam’s Sustainable Table is a casual and family friendly restaurant, serving an eclectic mix of culinary styles; from Northwest Regional to home cookin’ and affordable comfort foods.

Humanely raised proteins are rare in this day and age! We pride ourselves on the quality of our all natural, antibiotic and hormone free dairy, beef and poultry. Our seafood choices have been based upon the Monterey Aquarium’s Seafood Watch list since 1999. Our steroid and antibiotic free beef currently comes from a very local (7 miles from the restaurant) small production herd fed spent beer grain, resulting in well conformed and marbled steaks and super low carbon foot print. Our steroid and antibiotic free pasture raised chickens come from a small production facility on the Oregon coast. Our dairy products come from Lochmead Farms, a third generation dairy that has never believed in steroids or hormones of any kind. They have always bred and developed  their own cows and have an isolation nursery barn for any cows needing veterinary medical assistance or antibiotics. Lochmead will never return a cow into production that has not been tested antibiotic free.

Our chef and staff have been nationally and regionally recognized for both their culinary and sustainable efforts.

Entrees run from $14 to $34 with most non beef selections under $20.

We are located at 30 East Broadway in the heart of downtown Eugene, just two blocks from the Hult Center for the Performing Arts.

We have  two private dining rooms available for special events.

Patio seating is available as weather permits.
